Ingredients you will need

- Self-raising flour – the structure of the cake. Self-raising flour gives the cake a little rise and fluffiness. *If you don’t have self-raising flour, you can make your own by adding 2 teaspoons of baking powder to every 1 cup of plain flour and mixing them together.
- Brown sugar – brown sugar adds sweetness, richness and a lovely caramel-like flavour.
- Cocoa powder – a good quality, regular unsweetened cocoa powder for the chocolate flavour of the cake.
- Vanilla – to enhance the chocolate flavour. I recommend using vanilla bean paste or vanilla extract.
- Oil – adds moisture to the cake. Use a neutral-tasting oil like vegetable or canola oil, for best results.
- Milk – use whole, full-fat milk. If you require dairy-free mug cake, swap the milk for your preferred plant-based milk of choice.
- Chocolate chips – the chocolate chips will melt throughout the cake as the mixture cooks in the microwave, creating pockets of oozy, gooey chocolate. Add dark, milk or white chocolate chips, depending on your preference.

Step 1 – Make the cake batter;
**Use the tallest, largest mug you have to prevent the batter overflowing in the microwave.
Mix the dry ingredients (self-raising flour, cocoa powder and brown sugar) in the mug and stir to combine.
Add the oil, milk, vanilla paste and chocolate chips and stir until everything is just combined.
Step 2 – Microwave;
Place the mug in the microwave (see notes on cooking times below) for between 1 minute 10 seconds and 1 minute 30 seconds, until the cake is fluffy and cooked through, with gooey melted chocolate chips.
Step 3 – Serve;
Top with any of your favourite toppings (or as it is!) and enjoy.
Topping ideas
While hot chocolate mud cake tastes amazing on its own, you can dress it up with any of your favourite add-ins for the ultimate indulgence! Try any of the following toppings or add your own to your liking;
- add a spoonful of peanut butter to the batter before cooking
- stir some crumbled Oreos through the batter before cooking
- top with some salted caramel sauce or chocolate sauce.
- add a spoonful of Nutella to the batter before cooking for an oozy, chocolate hazelnut hit
- top with ice cream or whipped cream
- add some colourful sprinkles
- top with fresh berries like strawberries or raspberries
- try a dusting of icing sugar.

- This recipe makes one, single-serve mug cake (that can be divided into two serves with some toppings if you want to share!). For more, simply add more mugs and multiply the recipe. I still recommend microwaving one at a time, to ensure they are cooked properly.
- For best results, I recommend weighing the flour using gram measurements (with a digital scale), rather than relying on cup measurements, which are not as accurate. Too much of the dry ingredients will result in a dry cake.
- Be careful not to overcook, or the cake will be dry. The cake should be fluffy and moist and mostly cooked through, with bits of melted chocolate throughout. Since there is no egg, it’s ok for it to be slightly undercooked if you prefer a gooier texture.
- Don’t overfill your mug. The batter will rise up in the microwave and may overflow if your mug is too small. Choose a large mug with at least 310ml capacity. Tall is best.

If you prefer, the batter can be made in a mixing bowl and then transferred to a mug to microwave. This is especially helpful if you are making more than one serve. Or it can be cooked in a small, microwave-safe bowl instead.
All microwaves vary in wattage and cooking times, so microwave for the shortest time the recipe calls for to start. For reference, my microwave is 1100W and I cook mine for 1 minute 10 seconds. Lower wattage microwaves may need a little longer. If it’s not ready, keep going at 15 second intervals until it’s done. Once you have made it once, you can keep a note on the best cooking time and use it next time you make this recipe!
Add chocolate chips which will melt throughout the batter, making it extra gooey. You can also microwave it for a little less time, for a more fudgy texture.

- 2 tablespoons cocoa powder unsweetened
- 2-3 tablespoons light brown sugar

Made this for me, my partner and the kids as a quick treat after tea but swapped the he chocolate chips for white chocolate chunks instead. It was a big hit in our house and the kids have asked me to make it again. Excellent, just what I needed. I drastically reduced the sugar though and added half of a mashed banana and baked it in a gas oven untill the toothpick came out clean (I don’t have a microwave).
